
Autumn in Italy means a lot of mushrooms, funghi. So tonight a very delightful dish: “Tagliatelle con funghi, pomodorini & prezzemolo” (tagliatelle with mushrooms, tomatoes & parsley)
Ingredients: (for 2 persons)
- Fresh mushrooms
- 150 gram Tagliatelle
- 5 cherry tomatoes
- 1/2 glass of white wine
- 2 cloves of garlic
- handful of parsley
- pepper, salt
- olive oil extra vergine
How to prepare:
- Cut the cherry tomatoes in half. Cut the mushrooms in medium size pieces. Cut the parsley in small pieces.
- Heat a bit of olive oil in a skillet over moderate heat and add the garlic cloves. Take them out after 2 minutes. Add the mushrooms, the cherry tomatoes and a bit of pepper and salt over low heat. After 4 minutes add the wine. Leave it on the stove for 15 minutes.
- Meanwhile bring a large pan of water to boil. Once it boils add some salt and then the pasta. Leave it always 2 minutes less than instructions tell you to make sure the pasta is al dente!!! Then drain the pasta and add it to the skillet. Leave it for another 2 minutes while adding the parsley.
- Serve it and enjoy this delightful, autumnal dish! Buon appetito…

What kind of white wine is best to use with this?
We use not an expensive one, just one from the supermarket…for example a Vernaccia or Corvo! Happy cooking

How nice. I ate mushrooms soup in Finland and Netherlands. Both of them were really nice although the other food wasn’t good.
LOL, I don’t know about Finland, but I know that the food in the Netherlands is not the best
